Chef John's Brie with Ripe Pear and Black Pepper image

This simple and delicious appetizer was inspired by a favorite sandwich I occasionally make--baguette, butter, brie, pear, and pepper. Here we're using thin crackers instead of bread, and the brie, pear, and black pepper make an impressive appetizer.

Number Of Ingredients 4

1 (8 ounce) wedge Brie cheese
12 water crackers, or more as needed
1 ripe pear - halved, cored, thinly sliced
Freshly ground black pepper, coarse grind

Steps:

  • Spread about a tablespoon of brie (including the rind) on the crackers. Top with a thin slice of pear. Coarsely grind black pepper on the pears.
