CHEESY QUINOA CAKES WITH A ROASTED GARLIC AND LEMON AIOLI image

Number Of Ingredients 15

Quinoa Cakes
2 cups cooked quinoa
2/3 cup grated fontina cheese
3 tablespoons all purpose flour
2 green onions, thinly sliced
1 egg, lightly beaten
2 teaspoons freshly ground black pepper
Salt to taste
Extra virgin olive oil
Aioli
1/4 cup light mayonnaise
1/2 head of roasted garlic
1/2 lemon, zested and juiced
Pinch cayenne pepper
Salt and pepper to taste

Steps:

  • Aioli ---- Slice top off garlic head. Place in foil and drizzle with oil. Roast in toaster oven at 400 degrees for 30 to 40 minutes. Place all ingredients into small food processor, season with salt and pepper and blend until smooth. Pour into a small bowl and serve alongside the warm quinoa cakes. Quinoa Cakes ------------ Cook quinoa and let cool to room temperature. Place all ingredients, except for the oil, into a mixing bowl and stir together until well combined. Form 1/4 cup patties with the quinoa mixture, place on wax paper and allow to sit for 10 minutes in the freezer. Freeze remaining mixture for later use. Pour oil into a large sauté pan and place over medium heat. Cook quinoa cakes for about 5 minutes on each side.
