CHEESY POTATO SKINS image

Number Of Ingredients 5

4 Large Baking Potatoes (2 lb)
2 Tablespoons butter or Margerine, melted
1 cup shredded Colby-Monterey Jack cheese (4 oz)
1/2 cup sour cream
8 medium green onions, sliced (1/2 cup)

Steps:

  • 1) Heat oven to 375 F. Prick potatoes with fork. Bake potatoes 1 hr to 1 hr 15 mins or until tender. Let stand cool enough to handle 2) Cut potatoes lengthwise into 1/4ths. Carefully sculp out pulp, leaving 1/4 inch shells. Refrigerate pulp for another use. 3) Set oven control to broil, place potato shells skin sides down, on rack in broiler pan. Brush with butter 4) Broil with tops 4-5 inches from heat 8-10 mins or until crisp and brown. Sprinkle cheese over potato shells. Broil 30 seconds or until cheese is melted. Serve with Sour cream.
