CHEESY POTATO LEEK SOUP image

Number Of Ingredients 8

3lbs red potatoes
3 leeks
6 cups chicken broth
2 cups milk
4 slices bacon
4oz velveta cheese
1/2 cup colby jack cheese
pepper

Steps:

  • Boil and peel potatoes while sauting leeks in butter. Cut potatoes into bite size pieces and add to chicken broth and leeks. Bring this to a simmer and add milk and cheese stirring regularly. Add pepper to tast.
