Steps:
- 1. Preheat oven to 400 degrees.
- 2. Combine ground beef, onion, crackers, taco seasoning, salt & pepper with 1 cup cheese and 1/2 cup salsa. Mix it up as you would a meatloaf.
- 3. Divide meat mixture into 12 equal pieces. Press in to 12 muffin cups that have been sprayed with a cooking oil such as PAM. Make an intention on each piece with the back of a spoon.
- 4. Bake 25 to 30 minutes or until meatloaves are done. Top with remaining salsa and cheese; bake an additonal 5 minutes or until cheese is melted.
- 5. Serve with spanish rice, pinto beans and a slice of cornbread.
