Cheesy Chipped Beef on Toast image

Sharp cheddar makes this dish even better.

Number Of Ingredients 9

6-8 slice bread
5 pkg beef, lunch meat ( i use carl budding)
4 Tbsp butter
4 Tbsp flour
1/2 tsp salt
1/2 tsp ground mustard
1/4 tsp black pepper
2 1/4 c half and half or milk
1 c sharp cheddar cheese

Steps:

  • 1. Slice lunch meat into strips and set aside.
  • 2. Start by making a simple roux. Add butter to a sauce pan and heat on low until melted. Add flour, salt, pepper, and ground mustard, stir constantly until smooth and bubbly.
  • 3. Remove from heat and slowly add half & half stiring until it is well mixed. Return to heat and bring to a boil while stiring constatly. Boil for 1 minute until sauce thickens.
  • 4. Remove from heat and add cheese. Stir until all cheese is melted. Return to low heat, add meat and keep warm.
  • 5. Toast bread, and spoon chipped beef over toast.
