CHEESY BACON POTATO CASSEROLE image

Number Of Ingredients 7

6 medium potatoes
3 T mustard
1 cup mayonnaise
1 lb Velveeta
1 med onion, chopped
6 to 10 slices bacon
Salt and pepper

Steps:

  • Cut potatoes in bite size pieces and boil. While they boil, fry bacon, then sauté onion in bacon grease. Remove onion and drain. Crumble bacon. In medium bowl mix mayo, mustard, salt, pepper, onion, bacon and Velveeta cut in chunks. Drain potatoes when they are tender. Spray deep casserole dish with Pam, then layer with ½ potatoes, ½ mayo and cheese mixture. Repeat. Bake at 350* for 30 minutes.
