Steps:
- Preheat oven to 425 degrees Bring water to a boil with the butter and seasonings and boil slowly until the butter has melted Measure out the flour Remove water from heat and immediately pour all the flour at once. Beat vigorously with a wooden spatula or spoon for several seconds to blend throughly Return to moderately high heat and Beat 1-2 minutes till the mixture leaves the side of the pan and the spoon, forms a mass and begins to film the bottom of the pan Remove pan from heat and make a well in the center of the paste with your spoon. Immediately break an egg into the center of the well. Beat it into the paste for several seconds until it has absorbed. Continue witht he rest of the eggs, beating them in one by one. The third and fourth eggs will be absorbed more slowly Beat for a moment more to be sure all is well blended Beat the cheese into the warm pa'te a' choux. Correct seasoning if needed. Squeeze into circular mounds on a baking sheet. Paint with beaten egg and bake for 10-15 minutes till puffs are golden brown Can be served warm or cold
