Cheese Blintzes image

Number Of Ingredients 8

2 (12-ounce) cartons cottage cheese, low-fat
1 egg, beaten
4 packets artificial sweetener (Equal)
1 1/2 teaspoons lemon zest, grated
1/4 teaspoon vanilla extract
16 Bran Crêpes (recipe follows)
2 Strawberry Sauce recipes (recipe follows)
Mock Sour Cream (optional) (recipe follows)

Steps:

  • 1. Preheat oven to 350ºF.2. Combine first 5 ingredients and stir well. Spoon about 3 tablespoons cheese filling in center of each blintz. Fold right and left sides over filling then fold bottom and top over filling, forming a square.3. Use a nonstick baking sheet. Place blintzes, seam side-down, on baking sheet bake for 12 minutes or until thoroughly heated.4. Top each serving of 2 blintzes with 1/3 cup Strawberry Sauce. Serve with Mock Sour Cream if desired and add appropriate exchanges.Food exchanges per 2-blintzServing (with filling and sauce): 1 BREAD, 2 medium-fat MEAT
