CHARD GRATIN image

2 lbs. chard w/ 1/2 stems
4 Tbs. butter
1 onion
sea salt
pepper
1 cup bread crumbs
1 garlic clove
3 Tbs. dill or parsley
1 Tbs. flour
1 cup milk or cream
1 cup goat cheese

Steps:

  • Dice chard and add melted butter to wide skillet on med. heat. Add onion and stems and cook app. 20 minutes. Add leaves and i tsp. salt cook 10 minutes. Preheat oven to 400F and lightly oil 2 quart gratin dish. Melt half of remaining butter and add bread crumbs in small skillet with dill and garlic. Cook app. 1 minute and transfer to bowl. Return pan to heat melt remaining butter stir in flour and cream season w/salt and add to chard mixture. Add cheese, taste, season w/pepper. Pour mix into gratin dish and cover w/bread crumbs- bake 25 minutes.
