5 cups cauliflower florets, pulsed in food processor until rice sized
1 large egg
1/4 cup onion, minced
1/4 cup red bell pepper
1/4 cup jalapeno, minced (optional)
1/4 cup parmesan cheese
1/4 cup breadcrumbs
1/4 minced cilantro
salt and pepper
cooking spray

Steps:

  • Preheat oven to 350 degrees F.
  • Line a baking sheet with parchment paper.
  • In a medium bowl, combine cauliflower, onion, bell pepper, jalapeno, parmesan cheese, breadcrumbs, cilantro and season with salt and pepper.
  • Bake for 15-20 minutes, turning halfway through the cook time, until lightly golden.
