Cauliflower Stuffing image

Number Of Ingredients 11

4 tablespoons butter
1 cup butternut squash
2 stalks celery
1 head cauliflower chopped
1 cup mushrooms
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/4 cup chopped parsley
2 tablespoons rosemary fresh
1 teaspoon ground sage
1/2 cup vegetable or chicken broth

Steps:

  • In a large skillet over medium heat, melt butter. Add onion, butternut, and celery and sauté until soft, 7 to 8 minutes.
  • Add cauliflower and mushrooms and season with salt and pepper. Cook until tender, 5 to 10 minutes more.
