Cauliflower Mash image

This recipe is so simple to make and absolutely delish. I have to credit my sister, who is in recovery for breast cancer and has made me as health conscious as she is. I use organic cauliflower and organic butter. Great healthy alternate to mash potatoes and loaded with nutrition .

Number Of Ingredients 6

1 large cauliflower (organic preferably) stems removed
3/4 cup(s) milk
1 teaspoon(s) salt
1 teaspoon(s) pepper
1 tablespoon(s) parsely (fresh)
2 tablespoon(s) butter (organic preferably)

Steps:

  • In medium size pot on high heat, bring 6 cups of water to boil.
  • Place cauliflower in a colander on top of pot. Place lid on top of cauliflower to contain the heat. Steam cauliflower until soft. Approximately 10-15 minutes.
  • Place cauliflower in blender or food processor. Add milk, salt and pepper and puree until smooth. Place in serving dish and sprinkle with parsley!
