Cauliflower Dill Salad image

We like it on the light side , however, making it for a crowd, use regular mayo, they will think it is potato salad until they've taken a couple of bites. Number Of Ingredients 12

1 cauliflower, cooked till tender
2 stalk(s) celery
1 small onion, chopped
1 small red bell pepper
2 Tbsp fresh dill
2 Tbsp chopped dill pickle
2 Tbsp chopped cherry peppers
1 c low fat or fat free ranch dressing
1 carrot, sliced
1/2 cucumber, peeled and chopped
2 Tbsp green olives, chopped
salt and pepper to taste

Steps:

  • 1. Boil your cauliflower till tender. Don't cook to mush, it is replacing potato salad, so give it a bite. Cool and set aside.
  • 2. Prepare vegetables as in ingredients, chop, slice and place in large bowl
  • 3. Add rest of ingredients, mix, salt and pepper to taste
