Cashew Salad image

As a Longaberger consultant I used to go to Longaberger and Dresden often, and constantly looked for new recipes to use at parties. This one was one that I got on one of the trips. It is amazing, but I don't add the poppy seeds since I don't like them personally!

Number Of Ingredients 13

1 - head lettuce
1/2 bag(s) spinach
4 small red apples
1/2 pound(s) baby swiss, grated
12-14 ounce(s) cashews
DRESSING:
3/4 cup(s) sugar
1 teaspoon(s) dry mustard
1 teaspoon(s) salt
1 cup(s) oil
1/3 cup(s) cider vinegar
1 tablespoon(s) chopped onion
1 1/2 tablespoon(s) poppy seeds (i omitted)

Steps:

  • Make dressing 3 hours ahead and refrigerate. Slice and cut apples into bite sized pieces with the skins on. Set aside with lemon or pineapple juice so apples don't brown. Mix greens, drained apples, cheese and cashews. Add dressing a little at a time, it will be thick.
  • Optional: add cooked sliced chicken.
