CASHEW CRUNCH CHICKEN SALAD image

Number Of Ingredients 8

1 1/2 C diced cooked chicken breast (about 8 oz)
3/4 C chopped celery
1/4 C plus 2 T chopped roasted cashews
1/4 C thinly sliced scallions
1/4 C finely chopped red bell pepper
1/4 C nonfat or light mayo
3 t nonfat or light sour cream
pinch ground white pepper

Steps:

  • 1. Place the chicken, celery, cashews, scallions, and bell peppers in a L bowl and toss to mix well. Put the mayo, sour cream , and white pepper in a S bowl and stir to mix well. Add the mayo mixture to the chicken mixture and toss to mix well. Stir in a little more mayo if the mixture seems too dry. 2. Cover the salad and chill for at least 2 hours before serving. Use as a sandwich filling, serve over a bed of fresh salad greens, or use to fill a cantaloupe half.
