CARROT STICKS image

No clue as to where I got this recipe but I love carrots. These are really good and I especially like making them when I have an abundence of carrots that need to be used up.

Number Of Ingredients 5

1 pound(s) carrots, cut into sticks
2 tablespoon(s) brown sugar, firmly packed
1 teaspoon(s) cornstarch
1/4 cup(s) orange juice
2 tablespoon(s) butter or margarine, softened

Steps:

  • Boil carrot sticks in water until tender. Set aside.
  • In a saucepan, combine sugar, cornstarch then stir in orange juice and butter & mix until smooth. Slowly bring this to a boil and boil two minutes or until thick & bubbly.
  • Drain carrots and top with orange juice mixture.
  • NOTE: according to another great cook on this site, Colleen Sowa, you can cut the carrots into coins rather than into sticks.
