Carrot Slaw with Cranberries and Walnuts image

Number Of Ingredients 12

1 lb carrots, peeled and grated
3 Tbsp walnut or olive oil
1 tsp lemon zest
2 Tbsp lemon juice
2 Tbsp orange juice, fresh
1-1/2 Tbsp honey
1/2 c dried cranberries
1/2 c walnuts, toasted
3 green onions,thinly sliced
3 Tbsp freshly chopped parsley
1/2 tsp salt
1/4 tsp freshly ground black pepper

Steps:

  • 1. Toss all ingredients in a large bowl. Cover and refrigerate for at least 15 minutes. Serve cold.
