Steps:
- Preheat oven to 350*F (175*C). Grease a 13 x 9 x 2-inch baking pan; set aside. In a mixing bowl, combine dry ingredients. Add eggs, oil, carrots, and vanilla; beat until well blended. Stir in pineapple, coconut and 1/2 cup nuts. Pour into prepared baking pan. Bake for 50 to 60 minutes or until cake tests done when wooden pick inserted in center comes out clean. Cool. Combine frosting ingredients in a small bowl; mix until well blended. Spread over cooled cake. Sprinkle with remaining 1/2 cup nuts, if desired.
