This is a very easy, creamy, potato salad with very few ingredients and an unusual technique.

Steps:
- Boil the potatoes and eggs. Place in a bowl and cool in the fridge.
- Once cooled, peel the skin off the potato. Mince the potato, pickles and onion in a bowl.
- Peel the hard boiled eggs and grate them over the mixture in the bowl. Stir.
- Sprinkle the dill weed and pepper, stir.
- Add the mayonnaise and stir until combined. Taste the potato salad and add salt as needed.
- If you feel that it is a little bland you can add some mustard and/or pickle juice.
- Cover and refrigerate.
