Carolyn's Potato Salad image

This is a very easy, creamy, potato salad with very few ingredients and an unusual technique.

Number Of Ingredients 8

3 medium russet potatoes (they stay firm better than others)
3-4 Kosher baby dill pickles
½ medium sweet yellow onion
4 eggs (I used jumbo)
1 cup mayonnaise
1 tablespoon dill weed
salt and pepper to taste
Yellow mustard (optional)

Steps:

  • Boil the potatoes and eggs. Place in a bowl and cool in the fridge.
  • Once cooled, peel the skin off the potato. Mince the potato, pickles and onion in a bowl.
  • Peel the hard boiled eggs and grate them over the mixture in the bowl. Stir.
  • Sprinkle the dill weed and pepper, stir.
  • Add the mayonnaise and stir until combined. Taste the potato salad and add salt as needed.
  • If you feel that it is a little bland you can add some mustard and/or pickle juice.
  • Cover and refrigerate.
