Carnitas Enchiladas image

14 ounces 505 sauce
4 ounces Sour cream
1 package Costco carnitas meat
12 Tortillas
16 ounces Mixed Mexican cheese blend

Steps:

  • Preheat oven to convection 365°
  • Thaw carnitas and place in large skillet on medium heat. Break apart meat and pour in 4oz of 505 sauce. The mixture should not look soupy. Heat for approximately 5 minutes.
  • In medium bowl combine 2oz of sour cream and remaining 10oz of 505 sauce.
  • Warm tortillas either in the microwave or on the stove.
  • take a few spoonfuls of the sour cream and sauce mixture and spread on bottom of baking dish.
  • Place 6 tortillas evenly in the dish.
  • Add meat sauce mixture on top then layer with remaining 6 tortillas.
  • Top with remaining sour cream and sauce mixture then cover with cheese.
  • Place in oven and bake for 20 minutes.
  • top individual pieces with sour cream and guacamole. Enjoy!
