4 Tbsp vegetable oil
1 small green bell pepper, diced
1 medium onion, diced
3 clove garlic, minced
1/2 to 1 Tbsp paprika (or to taste)
1 tsp ground cumin
2 lb beef (stew meat), cubed
1 cup tomato sauce
1/2 cup white wine
1 1/2 cup beef broth (or water
2 lb potatoes, peeled and cut into bite-size chunks
2 Tbsp capers, rinsed and drained
salt, to taste
black pepper, to taste
OPTIONAL
6 servings cooked white rice, to serve (optional)

Steps:

  • 1. Heat oil in a large skillet over medium heat. Add bell pepper and onion, and sauté for 5 minutes. Then add the garlic, paprika and cumin. Cook for another 3 minutes.
  • 2. Add the stew meat and brown on all sides, about 5 minutes.
  • 3. Reduce heat to low (or simmer). Stir in the tomato sauce, wine and broth (or water). Cover skillet, and simmer over low heat for 90 minutes or until meat is tender.
  • 4. Add the potatoes, and capers. Cook for another 30 minutes or until the potatoes are tender.
  • 5. Season with salt and pepper. Serve it in bowls by itself (as a stew), or over cooked white rice.
