Caribbean Meatloaf image

Serve up your next meatloaf Caribbean-style, with red pepper slices, creamy dressing and a topping of melty VELVEETA.

Number Of Ingredients 8

1 egg, beaten
1-1/2 lb. lean ground beef
1 small onion, finely chopped
1/4 cup KRAFT Lite Thousand Island Dressing
1/4 cup crushed saltine crackers
2 Tbsp. OSCAR MAYER Real Bacon Bits
1 red pepper, cut into thin strips
1/4 lb. (4 oz.) VELVEETA, cut into 1/2-inch cubes

Steps:

  • Heat oven to 400°F.
  • Mix first 6 ingredients.
  • Press half the meat mixture onto bottom of 9x5-inch loaf pan. Top with peppers and VELVEETA, spreading to within 1/2 inch of edges. Cover with remaining meat mixture.
  • Bake 45 to 50 min. or until done (160°F). Let stand 5 min. before slicing.
