CARIBBEAN COOK-UP RICE image

Number Of Ingredients 12

2 tbsp butter
1 onion, chopped
1 garlic clove, finely chopped
1 carrot, chopped
14 oz canned gunga peas (pigeon peas)
1 cinnamon stick
1 fresh thyme sprig
2 1/2 cups vegetable stock
2 oz creamed coconut
1 fresh green chile, seeded and chopped
salt and pepper
scant 2 cups long grain rice

Steps:

  • melt the butter in a large, heavy-bottom skillet. Add the onion and garlic and cook over low heat, stirring occasionally, for 5 minutes or until softened Add the carrots, peas, cinnamon stick, thyme, vegetable stock, coconut, and chile, stir well, and season to taste with salt and pepper. Bring to a boil, stirring frequently. Add the rice and return to a boil, then reduce the heat, cover, and let simmer for 15 minutes or until the rice is tender and all liquid has been absorbed. Remove and discard the thyme and cinnamon stick, the fluff up rice with a fork. Server immediately
