Caramel Cashew Cake Bars image

These bars have a cakelike crust and chewy caramel and salty cashew topping. This recipe is a keeper!

Number Of Ingredients 12

3/4 c all purpose flour
1/2 c sugar
1/2 c packed brown sugar
1/2 tsp baking powder
1/4 tsp salt
2 eggs
1/2 c salted cashews, chopped
CASHEW TOPPING
1/2 c salted cashews
1/4 c packed brown sugar
2 Tbsp butter, melted
4 1/2 tsp heavy whipping cream

Steps:

  • 1. In a large mixing bowl, combine the flour,sugars,baking powder and salt. Beat in the eggs just until combined. Fold in the cashews.
  • 2. Spread into a 8inch square baking dish. Bake at 350 for 20-25 minutes or until top springs back when touched.
  • 3. In a small bowl, mix the topping ingredients. Spread over cake. Broil for 1-2 minutes or until bubbly and a little brown. Cut into bars while the cake is warm. Cool completely.
