Caramel Apple Cake image

I came up with this recipe because I only had a yellow cake mix in the house and thought that was boring. This is definitely not boring

Number Of Ingredients 13

1 box yellow cake mix
1 1/4 c water
3 eggs
1/3 c oil
2 tsp cinnamon (i like mccormicks roasted cinnamon)
1 tsp nutmeg
2 large apples, chopped very fine
1 c chopped pecans
1/3 c butter, not margerine
1/3 c brown sugar
1 tsp vanilla extract
powdered sugar
whole milk or half and half

Steps:

  • 1. Mix together the first 6 ingredients, beat for 2 minutes on medieum to high speed. Fold in the apples and 1/2 cup of the pecans. Pour into well greased bundt pan. Bake for 45-50 minutes (I go by the amount of time for a bundt cake on the cake mix box).
  • 2. For topping: in sauce pan melt together the butter and the brown sugar until sugar is desolved. Add in the vanilla. Add in enough powdered sugar to make a frosting consistancy, then add in enough milk to make it thin enough to drizzle on the cake. Add in 1/2 cup pecans. Drizzle over the cooled cake.
