No need for bread in this fun twist on the Italian classic salad, which uses waffles made easy with Original Bisquick mix.

Steps:
- Heat waffle maker; grease with vegetable oil or shortening. In large bowl, stir together Bisquick mix, egg, milk, Parmesan cheese, 2 tablespoons oil and the salt until smooth.
- Pour batter onto center of hot waffle maker. (Check manufacturer's directions for recommended amount of batter.) Close lid of waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle; cover to keep warm. Repeat with remaining batter.
- Spread 1 tablespoon tomato jam on one side of each waffle. Layer with mozzarella cheese, tomatoes and a few basil leaves; fold waffle over. Return to waffle maker. Close lid; cook 1 minute. Serve immediately.
