Steps:
- 1. In a food processor or blender - add the yams and puree. In a large sauce pan or dutch oven, add the pumpkin, ginger, pureed yams, sugar, cinnamon, nutmeg and salt. Cook for 20 minutes. Stirring constantly.
- 2. Remove from burner and cool to luke - warm. In a bowl whisk eggs, cream and vanilla.
- 3. Whisk in the egg mixture to the pumpkin mixture, until well blended.
- 4. Preheat oven to 400 degree F. Now, pour the yam - pumpkin filling into the prepared warm pre - baked pie crust and baked for 10 minutes. Reduce oven temp to 300 and bake until pie is set around the edges and center is just a little jiggly... about 30 - 35 minutes or longer depending on oven. If crust begins to get too dark, cover the crust with foil.
- 5. Cool for at least 4 hours and serve alone or with a big dollop of whipped cream.
