Candied Orange Walnuts (Connie's) image

My family has been making these walnuts for years. I do not know if they were "invented" by a family member or gotten out of another resource. I do know they're a big hit around the holidays. I put them in cellophane bags to give as gifts. I suppose you could make it with different nuts or extracts, just never have bothered....

1 1/2 c sugar
1/2 c corn syrup
2 Tbsp butter
1 tsp orange extract or emulsion (i prefer emulsion)
4 c walnuts , halves(the fresher, the better)

Steps:

  • 1. Recipe for making in the microwave:
  • 2. Place sugar, corn syrup and butter in a microwave-safe dish and cook on high for approximately 30 seconds.
  • 3. Add walnut pieces.
  • 4. Cook on high, checking every 30 seconds until walnuts are amber in color.
  • 5. Remove from microwave. Stir in extract.
  • 6. Pour onto a cookie sheet and cool completely. Store in an airtight container in a cool place.

  • 8. Melt sugar, corn syrup and butter in a large shallow pan over medium heat until incorporated.
  • 9. Add walnuts and cook stirring constantly for about 15 minutes or until amber in color.
  • 10. Remove from stove and stir in extract.
  • 11. Pour onto cookie sheet and cool completely.
  • 12. Store in an airtight container in a cool place.
