CAMPFIRE POTATOES image

Number Of Ingredients 4

4 heads BIG RUSSET POTATOES (use as many potatoes as you want to make for this recipe!!!! ex: you want to make 4, 7, or 10 then make 4, 7, or 10 potatoes!!!! but for this recipe the everyday home cook i've chosen to use 4 big russet potatoes cause it's a good place to start!!!! each person will get 1 potato!!!!)
4 strips BACON CUT IN HALF!!!! (DON'T USE THICK CUT BACON!!!! the reg. sliced bacon is what is needed 4 this recipe!!!!), YOU'LL NEED HALF A PIECE OF BACON 4 EACH POTATO YOU ARE MAKING!!!!
1 head BIG REGULAR ONION, CUT INTO 1/2in. THICK HALF-MOON SLICES (you can use a red onion if that's all you have but a regular onion is preferred for this recipe!!!! you'll use only 4 to 5 pieces of onion per potato!!!! when i make these potatoes i use 4 pieces of onion!!!! i found 4 pieces work best for me!!!!)
4 pieces HEAVY DUTY ALUMINUM FOIL (you'll need a piece of foil for every potato your making!!!!)

Steps:

  • 1. PREHEAT YOUR OVEN TO: 425*F. (if you don't want to turn on your oven, you can use a toaster oven [if you have 1!!!!] preheated to the same temp.) CLEAN/SCRUB YOUR POTATOES. AFTER YOU HAVE DONE THAT PAT THEM DRY AND SET ASIDE.
  • 2. TAKE YOUR 4 STRIPS OF BACON AND TAKE A KNIFE AND CUT YOUR STRIPS OF BACON IN HALF!!!! YOU'LL ONLY NEED HALF A STRIP OF BACON FOR EACH POTATO YOUR MAKING!!!! THEN TAKE YOUR ONION CUT AND IT INTO 1/2in. THICK HALF-MOON SLICES. YOU'LL ONLY NEED 4 TO 5 SLICES OF ONIONS FOR EACH POTATO!!!! (i found 4 pieces work best for me!!!!)
  • 3. THEN TAKE A KNIFE AND MAKE A SLIT INTO EACH POTATO BUT NOT ENOUGH TO GO ALL THE WAY DOWN!!!! (if you do mistakenly cut the tater all the way like i do all the time it's ok!!!! just bring the halved taters together stuff them w/ your bacon and onions wrap them in the foil and your good to go!!!!)
  • 4. AFTER YOU HAVE DONE MAKING SLITS IN YOUR POTATOES TAKE A PIECE OF YOUR CUT BACON AND PLACE INSIDE YOUR POTATOES WHERE YOU MADE THE SLIT!!!! THEN TAKE YOUR ONIONS AND PLACE ALONGSIDE YOUR BACON INSIDE THE SLIT AS WELL!!!!
  • 5. AFTER YOU HAVE "STUFFED" YOUR POTATOES W/ THE BACON AND ONIONS WRAP EACH POTATO IN A PIECE OF FOIL!!!!
  • 6. AFTER YOU HAVE WRAPPED ALL YOUR POTATOES YOUR MAKING YOU CAN COOK THEM OFF RIGHT NOW OR PLACE THEM IN A BOWL 'TIL YOUR READY TO BAKE/COOK THEM OFF!!!!
  • 7. PLACE YOUR WRAPPED POTATOES IN THE MIDDLE OF YOUR OVEN!!!! (or you can place your potatoes on a cookie sheet and then place your cookie sheet in the middle of your oven if you want to!!!! but you don't have to!!!!) BAKE FOR: 1 hr. (start checking your potatoes at 45 mins. in for doneness!!!!) HOW 2 TELL THAT YOUR POTATOES ARE DONE: TAKE A 2 PRONGED FORK IF YOU HAVE 1 OR A DINNER KNIFE AND PIERCE EACH POTATO!!!! *~*~*~*IF*~*~*~* YOU PIERCE EACH POTATO AND IT GOES IN EASILY W/ OUT RESISTANCE THEY ARE DONE!!!! USING KITCHEN TONGS OR ANY KITCHEN POTHOLDER TAKE THEM OUT OF THE OVEN AND PLACE THEM IN A BOWL AND SERVE THEM UP!!!! *~*~*~*IF*~*~*~* THEY ARE STILL FEELING HARD OR NOT BEING PIERCE EASILY PLACE THEM BACK INTO THE OVEN AND COOK THEM FOR 5 MINS. MORE!!!! CHECK ON THEM AGAIN!!!! KEEP DOING THIS UNTIL THEY ARE DONE!!!! ANOTHER WAY TO TELL THAT YOUR POTATOES ARE DONE IS BY: TAKING YOUR TONGS, POTHOLDER, OR OVEN MITT AND GENTLY SQUEEZING YOUR POTATOES!!!! *~*~*~*IF*~*~*~* IT'S SQUEEZABLE THEN THEY ARE DONE!!!! SERVE YOUR POTATOES W/ BUTTER AND/OR SOUR CREAM OR GREEK YOGURT!!!! (you can use greek yogurt in place of sour cream if you want to!!!!) SEASON YOUR TATER W/ SALT AND PEPPER IF YOU WANT TO!!!!
  • OTHER WAYS YOU CAN COOK YOUR POTATOES: THE GRILL METHOD: (via gas or charcoal!!!!) PREHEAT YOUR GRILL FOR: 5 MINS. ON MEDIUM HEAT THEN PLACE YOUR POTATOES ON THE GRILL!!!! (*~*~*~*IF*~*~*~* your gas grill has a shelf inside for corn or other veggies place your potatoes on that!!!! if not place your potatoes in the back of your gas grill!!!!) PLACE THE LID/COVER ON YOUR GRILL!!!! LEAVE THE POTATOES TO COOK FOR: 1hr!!!! HALFWAY THROUGH COOKING (30 mins. in!!!!) TURN OVER YOUR POTATOES TO MAKE SURE THAT YOUR POTATOES ARE EVENLY COOKING!!!! SERVE W/ BUTTER AND/OR SOUR CREAM OR GREEK YOGURT!!!! (you can use greek yogurt in place of sour cream if you want to!!!!) SEASON YOUR POTATO W/ SALT AND PEPPER IF YOU WANT TO!!!! HOW TO TELL THEY ARE DONE: TAKE A 2 PRONGED FORK IF YOU HAVE 1 OR A DINNER KNIFE AND PIERCE EACH POTATO!!!! *~*~*~*IF*~*~*~* YOU PIERCE EACH POTATO AND IT GOES IN EASILY W/ OUT RESISTANCE THEY ARE DONE!!!! ANOTHER WAY TO TELL THEY ARE DONE IS BY: TAKING YOUR TONGS, POTHOLDER, OR OVEN MITT AND GENTLY SQUEEZING YOUR POTATOES IF IT'S SQUEEZABLE THEN THERE ARE DONE!!!! *~*~*~*IF*~*~*~* THEY ARE STILL FEELING HARD OR NOT BEING PIERCE EASILY PLACE THEM BACK ON THE GRILL FOR: 5 MINS. MORE!!!! AFTER THAT CHECK ON YOUR POTATOES AGAIN TO SEE IF THEY ARE DONE!!!! KEEP DOING THIS UNTIL YOUR POTATOES ARE DONE!!!!
  • CAMPFIRE METHOD: (cooking your potatoes on campfire coals!!!!) GOING CAMPING OR HAVE CABIN IN THE WOODS AND WANT TO MAKE THESE POTATOES ON A CAMPFIRE???? ALL YOU HAVE TO DO IS MAKE SOME CAMPFIRE COALS AND TAKE YOUR FOIL WRAPPED TATERS AND PLACE THEM ON THE COALS TO COOK FOR: 1hr. HALFWAY THROUGH COOKING (like 30 mins. in!!!!) TURN OVER YOUR POTATOES SO THEY COOK EVENLY!!!! SERVE W/ BUTTER AND/OR SOUR CREAM OR GREEK YOGURT!!!! (you can use greek yogurt in place of sour cream if you want to!!!!) SEASON YOUR POTATO W/ SALT AND PEPPER IF YOU WANT TO!!!! HOW TO TELL THEY ARE DONE: TAKE A 2 PRONGED FORK IF YOU HAVE 1 OR A DINNER KNIFE AND PIERCE EACH POTATO!!!! *~*~*~*IF*~*~*~* YOU PIERCE EACH POTATO AND IT GOES IN EASILY W/ OUT RESISTANCE THEY ARE DONE!!!! ANOTHER WAY TO TELL THEY ARE DONE IS BY: TAKING YOUR TONGS, POTHOLDER, OR OVEN MITT AND GENTLY SQUEEZING YOUR POTATOES IF IT'S SQUEEZABLE THEN THERE ARE DONE!!!! *~*~*~*IF*~*~*~* THEY ARE STILL FEELING HARD OR NOT BEING PIERCE EASILY PLACE THEM BACK ON THE FIRE FOR: 5 MINS. MORE!!!! AFTER THAT CHECK ON YOUR POTATOES AGAIN TO SEE IF THEY ARE DONE!!!! KEEP DOING THIS UNTIL YOUR POTATOES ARE DONE!!!!
