Camp Rice image

This recipe came from a bunch of recipes for camping. It has become an often used recipe in our kitchen. It can be used as a main dish or as a side dish.

2 large onions, chopped
fist size chunk of salt pork or bacon, chopped
1 c rice
2 c boiling water
1/2 large can of tomatoes
1 Tbsp sugar
1 tsp celery seeds
1/4 tsp black pepper
grated cheese

Steps:

  • 1. Cut up the onions and salt pork and brown them a little in a kettle.
  • 2. Add 2 cups boiling water and a cup of rice. Don't stir. Cook until soft about 20 to 30 minutes. ---------------------OR----------------------------- Put the pork, onions, rice, and water into a rice cooker and cook until done.
  • 3. Be heating a half large can of tomatoes, 1 tablespoon sugar, 1 teaspoon celery seed, and 1/2 teaspoon black pepper. Add this to the cooked rice and sprinkle on grated cheese.
