CAKE MIX WHOOPIE PIES
Great when you're in a hurry. My favorite is the red velvet cake mix!

Steps:
- 1. preheat oven to 400 degrees
- 2. Line cookie sheet with parchment paper
- 3. In a large mixing bowl, mix all ingredients until well blended, either by hand or with a mixer set on medium low
- 4. Drop by 2 Tbl onto cookie sheet, 2 inches apart
- 5. Bake 8-10 minutes until puffed and toothpick inserted comes out clean. Cool completely on rack.
- 6. In a mixing bowl, add filling ingredients and beat until smooth.
- 7. put 1 1/2 Tbls of filling in the center of the bottom half of the pie and cover with the top, pressing gently so filling spreads. Keep chilled until ready to serve.
