CAJUN-STYLE SEAFOOD STEW image

Number Of Ingredients 15

1 pound fish
1/2 pound shrimp
1/3 cup all-purpose flour
1/3 cup cooking oil
2 1/2 cups chicken broth
2 lg. onions, sliced and separated into rings
2 large red or green bell peppers, chopped
3 banana peppers, seeded and sliced crosswise
2 cloves garlic, minced
1/2 tsp. salt
1/2 tsp. ground red pepper
1/4 tsp. black pepper
couple dashes red pepper sauce
2 sweet potatoes, peeled and sliced (l lb)
1 tsp. file powder

Steps:

  • In a 4 quart pan, stir together flour and oil. Cook over med. heat for 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir constantly for 15-20 minutes more until reddish-brown roux is formed. Gradually stir fish stock into roux. Stir in onions, peppers, garlic, salt, peppers. Bring to boil; reduce heat. Cover and simmer, covered 10 minutes more. Add fish and shrimp. Simmer, covered, about 5 minutes.
