This is an excellent way to prepare fresh red snapper. It's traditionally served with Cajun-style Red Beans and Rice.

Steps:
- Rinse fish and pat dry; set aside.
- In a shallow dish, stir together the flour, Cajun season, parsley, salt and pepper. Dredge each fillet in the flour mixture.
- Melt butter in a large skillet over medium heat. Add coated fillets, skin side down, in the hot butter. Cook 4 to 5 minutes or until skin is crisp. Using a spatula, carefully turn fillets and cook other side another 3 to 4 minutes or until fish flakes easily with a fork.
- Garnish with chopped green onion, and serve alongside your favorite Cajun-style Red Beans and Rice.
