1/2 head green cabbage, shredded
1/2 head red cabbage, shredded
1 large carrot, julienned or grated
1/4 red onion, thinly sliced
1/4 bunch fresh cilantro, chopped
1/2 red bell pepper, cubed
small jalapeño, chopped, or to taste, optional
DRESSING INGREDIENTS:
3 Tbsp fresh squeezed lime juice
1 Tbsp seasoned rice wine vinegar
1/2 tsp salt, (kosher or sea salt)
1/4 tsp fresh ground black pepper
1/4 tsp ground cumin
1/3 c avocado oil

Steps:

  • 1. In a large bowl, combine vegetables and toss.
  • 2. In a small mixing bowl, combine lime juice, rice wine vinegar, salt, pepper, and cumin. Whisk to dissolve salt. Slowly drizzle in avocado oil while continuing to whisk until fully incorporated into a dressing. Drizzle dressing over veggies and toss to coat.
