Butterscotch scones image

Number Of Ingredients 10

2 cups All purpose flour
1/3 cup Sugar
1 1/2 teaspoons Baking powder
1/2 teaspoon Baking soda
1/4 teaspoon Salt
1/2 package Butterscotch chips
6 tablespoons Unsalted butter (chilled)
1/2 cup Buttermilk
1 Egg
1 1/2 teaspoons Vanilla

Steps:

  • Preheat oven to 400 degrees.
  • Combine flour, sugar, baking powder, baking soda and salt. Stir by hand to distribute ingredients evenly.
  • Cut butter into half-inch cubes. Add them to the flour mixture. Use a pastry blender to cut the butter into the mixture until the mixture resembles coarse crumbs.
  • Add butterscotch chips to the flour mixture and mix by hand to distribute them through the flour.
  • Whisk together the buttermilk, egg, and vanilla. Pour into the flour mixture and stir to combine and evenly moisten the dry ingredients and form a dough.
  • Turn the dough out onto a cutting board. With lightly floured hands, pat the dough into an 8-inch diameter circle. Don't make the dough too "tight." It should just hold together, with bits of air space within. Cut into 8 wedges. Place the wedges on a greased cooking sheet or pan, leaving spaces between them.
  • Bake for about 18 to 20 minutes, until scones are golden brown. Wait until the scones have cooled and are no longer hot before removing them from the sheet.
