BUTTERNUT SQUASH AND KALE SALAD image

Number Of Ingredients 6

2 bunches kale
1 c vegetable broth
1 butternut squash 1/2" cubes
1 red onion
4 pitted dates, finely chopped
2 T sherry vinegar

Steps:

  • steam kale in 1/2 cup vegetable broth over medium heat covered until kale is wilted. Add squash and cook, stirring occasionally until squash is tender. cool to room temperature In saucepan, combine 1/2 c broth, onion, dates, vinegar. Bring to boil, lower heat and simmer uncovered until onion is tender and liquid is reduced by 1/2. Cool. toss with kale mixture
