Buttermilk Pound Cake image

My mother LOVED pound cakes. Momma had Crohns disease and when she didn't feel well, sometimes pound cake was the only thing that she could eat. She has been gone almost 5 years but I still think of her everytime I make this pound cake.

Number Of Ingredients 10

1/2 c margarine, softened
1/2 c vegetable shortening
2 c sugar
4 eggs
1/2 tsp baking soda
1 c buttermilk
2 c plain flour
1/8 tsp salt
2 tsp lemon extract
1 tsp almond extract

Steps:

  • 1. Cream margarine and shortening; add sugar and mix well. Add eggs, one at a time, beating after each egg. Dissolve soda in buttermilk. Combine all dry ingredients. Add alternately with buttermilk to creame mixture. Stir in flavorings. Pour into a greased and flowered tube pan. Bake 350 degrees for 1 hour and 5 minutes. Cool in pan for 10 minutes.
