Number Of Ingredients 6

1 egg white
1 cup sugar
1/4 teaspoon cream of tartar
1/2 cup boiling water
1 teaspoon lemon rind
1/2 teaspoon lemon extract

Steps:

  • combine very well chilled egg white
  • sugar cream of tarter in small mixing bowl.
  • add boiling water and beat immediately at high speed until thick and fluffy (see this is where i feel might have scrambled eggs without tempering ).
  • add lemon rind finely grated and lemin extract.
  • can tint if you want.
