Steps:
- Preheat oven at 160 degree celsius. Butter and lined a 6-inch round cake pan or loaf pan. In a stand-mixer at medium-high speed, beat butter, brown sugar and HALF granulated sugar for 2mins. Scrape down sides and beat until light and fluffy. Add in vanilla extract and mix. Add in eggs one at time until well incorporated. Scrape down sides at every yolk addition. Sift in flour and mix at low. Add in buttermilk and mix well. Add in the rest of the flour and mix BY HAND until incorporated. Do not overmix. Set aside. In a separate bowl, beat whites and 40g of granulated sugar until almost stiff peak. Add in half of the meringue into the batter at low speed until almost incorporated. FOLD IN BY HAND the rest of the meringue until incorporated. Bake for 60mins. Cover the top with foil half way in baking. Cool on wire rack for 10mins before turning out.
