Brown Sugar Apple Cake image

This cake is moist, relatively light, with lots of taste and texture that is sure to please. And it is very easy to make.

CAKE
2 cup(s) all purpose flour
1 3/4 cup(s) brown sugar, firmly packed
1/2 cup(s) butter, melted
3 - eggs
2 teaspoon(s) cinnamon
1/2 teaspoon(s) salt
1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda
1 1/2 teaspoon(s) vanilla
3 - apples
1/2 cup(s) raisins
1 cup(s) pecans, in pieces
ICING
1 cup(s) powdered sugar
1 tablespoon(s) milk
1/2 teaspoon(s) vanilla

Steps:

  • Preheat oven to 325 degrees F. Spray a bundt cake pan with cooking spray. Peel, core and thinly chop the apples. In a large mixing bowl mix all ingredients together except raisins and pecans, on high speed until very well blended. (about 3 minutes)
  • Stir in raisins and pecans until well distributed. Pour batter into prepared pan and bake at 325 degrees F. for 1 hour, or until a tooth pick inserted in the middle comes out clean.
  • When cake is completely cooled, invert it onto your serving platter then prepare the icing by stirring all ingredients together till of drizzling consistency. Drizzle all over the cake top.
