Broiled Steaks with Parmesan-Sage Potatoes image

1 teaspoon paprika
1 teaspoon pepper
1 teaspoon salt, divided
1/2 teaspoon sugar
1/2 teaspoon garlic powder
1/2 teaspoon dried sage leaves, divided
4 beef tenderloin steaks (6 ounces each)
1 large onion, halved and thinly sliced
2 tablespoons butter
2 teaspoons brown sugar
1 package (24 ounces) refrigerated mashed potatoes
1/2 cup shredded Parmesan cheese

Steps:

  • Combine the paprika, pepper, 1/2 tsp. salt, sugar, garlic powder and 1/4 tsp. sage; sprinkle onto steaks on both sides., Broil steaks 4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, in a large skillet, saute onion in butter until tender. Add brown sugar and remaining salt; saute 1 minute longer. , In a small microwave-safe bowl, combine the potatoes, cheese and remaining sage. Microwave, uncovered, on high for 2-3 minutes or until heated through. Serve with steaks and onion.
