Broccoli Casserole image

This is a delicious side dish and is wonderful to take to pot lucks or family get-togethers. It disappears very quickly, so you may not have any leftovers. Enjoy!

Number Of Ingredients 10

2 pkg frozen broccoli, 10 ounce size, chopped
1 can(s) cream of mushroom soup
3/4 c mayonnaise
2 large eggs, beaten
1 c grated cheddar cheese
1 c onion, chopped
salt and pepper to taste
TOPPING
1 pkg stuffing mix, 8 ounce size (i use pepperidge farm in the blue bag)
1 stick butter

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 9 X 13 baking dish with cooking spray, set aside.
  • 2. Cook broccoli until tender and drain. In a large bowl, combine soup, mayonnaise, eggs, cheese, and onion. Add salt and pepper. Fold in broccoli.
  • 3. Pour broccoli mixture into prepared baking dish and top with stuffing mixture. Bake at 350 degrees for 45 minutes.
  • 4. TOPPING: Melt butter and mix with stuffing. Sprinkle on top of casserole.
