Broccoli & Bacon Frittata image

We just had this for breakfast..so good!...Enjoy

Number Of Ingredients 12

4 - 5 slice bacon, cut into 1 inch pieces
2 c frozen shredded hashbrowns, thawed
1/2 c green or red pepper, chopped
1 1/4 c chopped fresh broccoli, or i have used frozen, and thawed
1/2 c chopped red onion
6 eggs
3 Tbsp milk or water
1/2 tsp crushed rosemary
1/2 tsp salt
1/4 tsp pepper
1/4 tsp paprika
2 Tbsp shredded parmesan cheese

Steps:

  • 1. Gather ingredients. Chop your vegetables, set aside Preheat oven to 350 degree.
  • 2. In an 8 inch ovenproof skillet, I use my well seasoned cast iron skillet. Cook bacon until crisp. Drain, leaving drippings in the skillet. Place bacon on paper towel.
  • 3. In the same skillet; add hash browns, broccoli, green pepper, onion and rosemary; cover and cook over low heat until hash browns are golden brown; stirring a few times. About 15 minutes. Add more liquid if necessary to keep from sticking, I have used chicken stock, or oil . The potatoes will suck up the bacon fat. The fat makes it taste so good! When finished cooking set aside.
  • 4. In a medium bowl, whisk the eggs, water or milk, salt and pepper.
  • 5. Pour over hash browns. Top with bacon, paprika and parmesan cheese. Bake uncovered for 25 to 30 minutes or until eggs are completely set.
  • 6. Enjoy!
