Broccoli Apple Cranberry Salad image

A light broccoli apple salad, good as a side dish or as a meal of its own. A great mix of flavors and textures that please with each bite.

1 cup mayonnaise
2 tablespoons lemon juice
2 tablespoons agave nectar
1 clove garlic, minced
1 tablespoon apple cider vinegar
fresh ground black pepper
sea salt
6 cups broccoli florets, chopped
1 apple - peeled, cored, and chopped
½ cup slivered almonds
½ cup grated carrots
¼ cup diced red onion
¼ cup dried cranberries

Steps:

  • Mix mayonnaise, lemon juice, agave nectar, garlic, apple cider vinegar, black pepper, and sea salt together in a bowl.
  • Combine broccoli, apple, almonds, carrots, red onion, and cranberries in a separate bowl.
  • Pour dressing into the salad; toss until well-coated. Chill in the refrigerator for 30 minutes.
