Breakfast Casserole image

It's a hash brown casserole with a little bit of a twist. Nothing too scary, but just enough to make it perfect for breakfast or for dinner :)

1 lb frozen hash browns, thawed
1 can(s) cream of chicken soup
1 c sour cream
1/2 c milk
2 1/4 c (8 oz) grated cheddar cheese
1/4-1/2 c diced bell peppers
1 medium onion, diced
1/2 lb thick cut bacon
1 pkg (sleeve) ritz crackers, crushed
1 stick plus 2 tbsp melted butter
dash(es) salt and pepper, to taste

Steps:

  • 1. In a large skillet saute onion and bacon until the bacon is just browned. Remove from heat and set aside.
  • 2. In a large mixing bowl combine: soup, sour cream, milk, 1 stick melted butter, 2 cups cheddar cheese, salt and pepper. Mix until blended.
  • 3. Add the bacon and onion to the mixing bowl. Mix in the bell peppers and hash browns until evenly combined.
  • 4. Place in a greased 13x9 inch baking dish and spread evenly. top with the remaining cheddar cheese and Ritz Crackers. Drizzle the remaining melted butter over the top.
  • 5. Bake at 350 degrees for 1 hour or until the top is a nice golden brown. Let cool for about 5 minutes before serving.
