Breakfast Casserole image

A great weekend breakfast for the family that you make the night before. Perfect for the holidays too! Got this from a friend at work.

Number Of Ingredients 12

16 ounces ground sausage (Italian, plain, spicy)
6 English muffins, cut into 1-inch cubes
1/4 cup butter, melted
2 cups cheddar cheese, shredded
2 cups mozzarella cheese, shredded
1/2 cup onion, chopped
1/2 cup red pepper, chopped
12 eggs
2 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper
2 1/2 ounces bacon bits

Steps:

  • Cook sausage, breaking up well.
  • Mix both cheeses together in a bowl.
  • Place English muffin pieces into a greased 9 x 13 baking dish.
  • Drizzle melted butter over muffin pieces.
  • Layer sausage, cheese, onion and red pepper on the muffins.
  • In a large bowl, combine the eggs, milk, salt and pepper and pour over the cheese mix.
  • Sprinkle bacon bits on top of everything, cover and refrigerate overnight.
  • Remove from refrigerator, uncover, and let it sit for 30 minutes prior to baking.
  • Bake at 350 for 60 minutes or until a knife inserted in the middle comes out clean.
  • Let stand 5 minutes and then serve.
