Bread Essentials: Hearty Gluten-Free Bread image

This recipe comes from a neighbor of mine who used to own a restaurant in San Francisco. They catered to the health-conscious crowd, so she made a lot of gluten-free stuff. When she gave me the recipe, I was a bit skeptical, and although I did make a change or two, the final result won me over. This is not a "typical" gluten-free bread recipe, this one has a lot of body. So, you ready... Let's get into the kitchen.

Number Of Ingredients 9

PLAN/PURCHASE
5 large fresh eggs
1/4 cup(s) flaxseed meal
1/4 cup(s) almond butter
2 tablespoon(s) coconut flour
1 1/2 tablespoon(s) fresh clover honey
1 tablespoon(s) apple-cider vinegar
1 teaspoon(s) fresh baking soda
1 teaspoon(s) salt, kosher variety

Steps:

  • PREP/PREPARE
  • You will need a standard baking pan... something around 8 x 4 inches (20 x 10cm). If you are using a smaller container, you will need to adjust the baking time accordingly.
  • Gather your Ingredients (mise en place).
  • Place a rack in the lower position, and preheat the oven to 350f (175c).
  • Add all the ingredients to a stand mixer, or blender.
  • If you are using a stand mixer, use the paddle attachment.
  • Blend until thoroughly combined.
  • Line a baking pan with parchment paper, let it drape over the sides, and add the bread mixture.
  • Place into the preheated oven, and bake until a toothpick inserted in the center comes out clean, about 28 - 30 minutes.
  • PLATE/PRESENT
  • Allow to cool for 10 minutes, then slice and eat. Enjoy.
  • Keep the faith, and keep cooking.
