BRANDIED FOAMY SAUCE image

Number Of Ingredients 7

1/2 c. butter
1 - 1/3 c. sifted powdered sugar
dash salt
1 egg, separated
2 T. cognac, probably more
1/2 c. heavy cream, whipped
dash nutmeg

Steps:

  • Soften butter and gradually blend in sugar. Add salt and egg yolk and beat well. Cook over hot, but not boiling water, stirring constantly 6 - 7 minutes until light and fluffy. Remove from heat, add brandy and chill. Fold in egg white beaten into soft peaks. Fold in whipped cream just before serving.
