BONNIE'S CHICKEN O'DARE image

This is comfort food. Pure and simple. Long and slow roasting makes this chicken moist, tender, and juicy. I like to serve this roasted chicken with mashed potatoes, and that wonderful suntan gravy spooned over both the mashed potatoes and the chicken. I usually add a green vegetable to go with it or a tossed salad. This is the way we cook chicken out West. I hope you like this humble recipe. Enjoy!

CHICKEN
6 chicken thighs, bone in, skin trimmed of excess fat
1 cup of saltine cracker crumbs
1/2 cup melted butter
SUNTAN GRAVY
4 tablespoons butter
4 tablespoons all purpose flour
salt and white pepper to taste
3 to 4 cups chicken broth
2 teaspoons paprika
1/4 teaspoon sage
1/4 teaspoon poultry seasoning
1/4 cup heavy cream reserved

Steps:

  • Spray a pan and rack with kitchen spray.
  • MAKING THE CHICKEN: Trim the chicken thighs of any excess skin but leave a small piece on top of the thigh to enhance flavor. Dip each thigh in the melted butter and roll in the cracker crumbs.
  • Preheat the oven to 450 degrees, middle rack. Place the thighs on the rack. Don't let them touch each other. Place the pan of chicken in the oven and roast for 20 minutes. LOWER the heat to 275 degrees and roast for 1 hour 15 minutes. Then boost the heat up to 400 degrees for 10 to 15 minutes while you brown the chicken to your liking. Keep an eye on it because every oven is different. (I prepare the gravy when I raise the temp for the last 15 minutes of cooking time.)
  • Your chicken will be moist, juicy, and tender inside, and crunchy on the outside. Perfect!
  • MAKING THE SUNTAN GRAVY Melt the butter in the skillet.
  • Add the flour.
  • Add the paprika.
  • Add salt and pepper. Stir until the flour mixture and butter is a nice suntan color.
  • Add chicken broth and whisk until smooth, adding more chicken broth, a little at a time, as it thickens. You want it thick, but pourable. Stir in sage and poultry seasoning. Now, to finish, stir in the cream and mix well, and serve immediately while it is hot.
  • Mmmmm, Perfect chicken!
